Mango Phirni
Ingredients:
- 50 gm Govind Bhog Rice, washed, soaked
- 1-liter Milk
- 2 Mangoes
- 2-3 Green Cardamom, roughly crushed
- 1 tbsp. Cashew paste
- 100 gm Sugar
For Garnish:
- Mango, Florets
- Pistachio
- Few Mint leaves
Method:
- In a grinder jar, add soaked basmati rice and little water and grind it into a coarse paste. Keep aside.
- Now, in a large kadai boil milk. Stir occasionally, and simmer for 10 minutes.
- Now, add in prepared coarse rice paste, Stir continuously for 5 minutes.
- Peel the mango and cut into slices. transfer it into a grinder jar and grind it into a paste
- Boil the milk till the rice gets cooked completely.
- Further add, mango pulp and stir occasionally.
- Add crushed green cardamom, cashew paste and mix it well.
- Add sugar and mix well till the milk thickens and turn creamy.
- Pour it into a bowl, and refrigerate till it sets cool.
- Finally, serve chilled mango phirni garnished with mango florets, pistachio etc.
Mango Ginger Lemonade
Ingredients:
- ½ Cup Mango Pulp
- ½ Lemon
- 1 Inch Ginger
- Honey as required
- 1 Cup Water
Method:
- Take water and honey in a bowl. Squeeze the lemon in it
- Add mango pulp
- Crush ginger using muddler, add mango to lemonade mix stir / shake, strain.
- Serve chilled.
Mango Chia Pudding
Ingredients:
- 4 Tsp Chia Seeds
- 1 Mango peeled and pureed
- 1 Cup reduced fat coconut milk
- 1 Tsp Maple Syrup
- 1 Tsp Cardamom Powder
- ¼ Tsp Sea Salt
Topping:
- ½ Cup Mango diced
- Coconut flakes
- Pistachio
Method:
- Add chia seeds to a mixing bowl mix. Add mango pulp, coconut milk, maple syrup, cardamom powder, and sea salt
- Mix well breaking any lumps. Cover and refrigerate for at least 3 hours
- Served chilled, topped with mango, coconut flakes and pistachio
