Unsalted butter                      100 gm

Sugar substitute                     60 gm

Khoya                                       120 gm

Almonds                                  300 gm

Desi ghee                                90 gm

Mascarpone cheese              50 gm

Recipe:

Prepare Tart Base:

Cream unsalted butter and sugar/sugar substitute of your choice together in a planetary mixer with a paddle attachment until thick and creamy. Alternatively, use a wooden spoon and bowl.

Add the flour and mix well to form the tart base dough. Refrigerate for 4-5 hours or overnight.

Prepare Almond Halwa:

Grind the almonds to a slightly coarse powder.

Heat desi ghee in a heavy-bottomed pan, add the almond powder, and cook on low heat.

Cook until slightly brown, then add the sugar and cook for another 5-10 minutes.

Add the khoya and cook for 10-15 minutes until the almonds and khoya bind together.

Assemble and Bake:

Roll out the dough into a 9-inch round and line an 8-inch tart shell with it.

Bake at 180°C for 15-20 minutes until the pastry is fully cooked and golden.

Mix the almond halwa with mascarpone cheese and fill the tart evenly.

Garnish and Serve:

Garnish with sliced toasted almonds.

Serve warm, optionally with a scoop of vanilla ice cream.
